Recipe: Farmer`s cheese cookies

I still remember these cookies from my childhood, my mother made them and they have always been so delicious! The recipe of my mom should be somewhere but I tried to make a different recipe and it turned out quite well, the ingredients are usual and the preparation is simple and fast. I used Ricotta cheese from Piimameister Otto, bought in Maxima (green packaging), this cheese is quite good and cheap (0.36€ for package).


Ingredients:

- 70 g of butter
- 200 g of farmer`s cheese
- 1 egg
- 200 g of flour
- 1 tea spoon of baking powder
- sugar

Preparation:

1) Melt butter in a microwave, cool a little and mix butter, farmer`s cheese, egg, sifted flour and baking powder with your hands in a soft dough.
2) Put the dough in the fridge for 30 minutes.
3) Heat the oven to 200 degrees. Roll the dough to 0.5 cm thickness and cut out circles with some cup.
4) Sprinkle the top of the circle with sugar, fold it twice (sugar side inside), dip in the sugar, fold it twice again and dip in the sugar.
5) Put the cookies on the baking tray covered with baking paper and place in the oven for 10-12 minutes until the cookie becomes golden. Do not hold it in the oven for a long time, the cookie can become very firm.

A quick snack or a fast dessert when guests are coming :)
