Recipe: cream-cheese baskets



The idea of these baskets came quite suddenly, when cream cheese, whipping cream and condensed milk were left from the preparation of the cake. I had a cookie dough in freezer, so I decided to experiment and the experiment was successful in my opinion :)
Basket-cakes are made quickly, look great and can be served for guests or yourself!

Ingredients:

- 1 package of cookie dough
- 150 g of cream cheese
- 50 ml of heavy whipping cream
- condensed milk
- fresh berries for decoration


Preparation:

1) Defrost cookie dough.
2) Preheat the oven to 200 degrees.
3) Oil the muffin baking shape and form a basket from dough in each cell.
4) Poke dough with a fork and put it in the oven until golden.
5) Prepare the filling: whip cream-cheese of room temperature, whipping cream and condensed milk (add it to taste), so that the cream becomes thick and it can be layed with a confectionery bag.
6) Cool the baskets.
7) Put the cream to the confectioner's bag with the nozzle and lay it on each basket.
8) Decorate with fresh berries and mint.

Keep it in refrigerator.

Recipe: honey cake with prune and banana



I never thought that I would be baking. But a few weeks ago I participated in one baking contest and took first place in it. This gave me a motivation to try something new. My friend's husband saw a picture of my cake and asked me to bake a cake for his wife and guests for her birthday (he arranged a secret surprise party for her). Since the amount of guests was 15+, I decided to make a honey cake (medovik), because I have never done it before.

Of course I was afraid that something would go wrong and I'll screw it up, so I was looking only for proven recipes for honey cake with reviews of real people. I had already done Pavlova's cakes by this blogger`s recipe and I really liked that all the recipes accompanied with the photos and detailed description, so I decided to stop on this recipe and did not regret it. I increased the number of ingredients by 2 times (in my recipe it's already doubled), but for the cream it was not necessary to increase the ingredients that much, the half of the cream still remained (I used 1250 g of sour cream, I recommend taking 900 -1000 g).

My cake turned out 3.5 kg, the taste was incredible, all the guests loved it! Prunes and bananas are especially good in there. I already came up with interesting recipes for Christmas, so do not forget to follow my page :) There are so many recipes and other interesting stuff not written in the blog yet!

If you do not plan to make such a big cake, then take the ingredients two times less than in my recipe.

Ingredients:

Layers:

- 4 eggs
- 400 g of sugar
- 4 Tbsp of honey
- 2 ts of soda
- 200 g of butter
- 900 g of flour


Cream:

- 1 kg of sour cream (20%)
- 350 g of sugar
- 2 tsp of vanilla sugar or vanilla paste
- 250 g of prune
- 3 bananas


Preparation:

Layers:

1) Put the water in a saucepan on a fire.
2) Put eggs, sugar and honey in a bowl.
3) Add the soda and mix well.
4) When the water in the saucepan boils, place the bowl on a saucepan (make water bath) and mix eggs with sugar for 7-10 minutes, so that the eggs do not curl. Add the butter and stir until completely dissolved.
5) Remove the bowl from the water bath, add half of the specified amount of flour and mix well. Leave the batter to cool.
6) When the batter has cooled, add the second half of the flour and knead the soft dough.
7) Divide the dough into 6 parts.
8) Preheat the oven to 200 degrees.
9) Roll the dough on baking paper, cut out with a shape (or a plate. I had a rectangular shape in size 35x24 cm). Roll remaining dough together, roll it in the end, bake and make a crumb of it.
10) Poke dough with a fork, make frequent pokes around the entire dough to prevent it from rising.
11) Bake each layer until golden brown (about 4 minutes). Layers are baked very quickly, so keep an eyes on them!
12) Fold the baked layers on top of each other and leave to cool.



Cream:

1) Beat cold sour cream with sugar and vanilla sugar. Beat with the mixer, cause this will take time (do not be afraid if the sour cream is very liquid at first, it will rise after whipping and thicken, but it will take about 15 minutes!).
2) Cut prunes and bananas into small pieces.
3) Now we will assamble the cake: put cream on each layer, sprinkle with prunes and bananas. Put cream on a sides, too.
4) Make the crumbs of the leftover baked dough in the blender.
5) Sprinkle the cake with crumbs from the top and sides.
6) Put it in the fridge and let it stay for one night.
7) If you wish, you can decorate only with fresh berries. And if you want to decorate also with chocolate, then melt the chocolate (240 grams of dark chocolate) with butter (120 grams) in a water bath. Mix well, pour into the cellophane bag. Cool a little, cut a corner of the bag and decorate with chocolate around the perimeter of the cake. Put the berries on the chocolate to fix them.

Retsept: meekook kuivatatud ploomide ja banaanidega



Ma kunagi ei mõelnud, et hakkan tegelema küpsetamisega. Aga mitu nädalat tagasi osalesin ühes võistluses, mis oli mõeldud kodukokkadele ja oli vaja teha mingi küpsetis, ja võitsin selle. See andis mulle motivatsiooni proovida veel ja veel. Mu tordipildi nägi sõbranna abikaasa, kes planeeris teha abikaasa sünnipäeval salapidu. Ta palus mind teha temale ja külalistele kooki. Kuna külalisi oli 15+, siis ma kuidagi jõudsin mõtteni teha meekooki, kuna ma kunagi pole seda varem teinud.

Loomulikult ma kartsin, et midagi läheb viltu ja sellepärast otsisin kindla retsepti tagasisidega. Ma olen juba varem teinud selle blogija retsepti järgi Pavlova kooke ja mulle meeldis, et kõik õpetused on koos piltidega, seega otsustasin teha tema retsepti järgi. Ma kahekordistasin kõik koostisosad, kuid tegelikult kreemi jaoks koostisosi ei olnud vaja kahekordistada, kuna kreemi on jäänud veel pool sellest, mis tuli välja peale vahustamist (ma kasutasin 1250 g hapukoort).

Minu kook tuli välja 3.5 kg, maitse oli oivaline, kõik kiitsid heaks! Eriti head on selle sees ploomid ning banaanid. Ma juba plaanin midagi huvitavat teha ja teile näidata Jõuludeks :) Ärge unustage mind jälgida!

Koostisosad:

Põhi:

- 4 muna
- 400 g suhkrut
- 4 supilusikat mett
- 2 teelisukat soodat
- 200 g võid
- 900 g jahu


Kreem:

- 1 kg hapukoort (20%)
- 350 g suhkrut
- 2 teelusikat vanillisuhkrut või vanillipastat
- 250 g kuivatatud ploomi
- 3 banaani


Valmistamine:

Põhi:

1) Pane vesi potis tulele.
2) Pane kuumakindla kaussi munad, suhkur ja mesi.
3) Lisa sooda ja sega korralikult.
4) Kui vesi hakkas keema, siis pane kauss veevannile ja sega pidevalt 7-10 minutit, et munad ei hüübiks. Lisa või ning sega kuni või täielikult sulab.
5) Võta kauss veevannilt ära ning lisa pool jahu (450 g), sega korralikult. Jäta taigen jahtuma.
6) Kui taigen on jahtunud, siis lisa tasapisi ülejäänud jahu ning sega pehme taigen.
7) Jaga taigen 6ks osaks.
8) Soojenda ahi 200 kraadini.
9) Rulli taigen küpsetuspaberi peal, lõika vormiga (mul oli ristkülikuline vorm, 35x24 cm). Ülejäänud taigen pane kokku ja kõige viimasena rulli, küpseta ja tee sellest puru.
10) Torka iga põhi enne küpsetamist kahvliga, et taigen ei mullitaks.
11) Küpseta iga põhi umbes 4 minutit (kui muutub kuldseks, siis on valmis). Põhjad valmivad väga kiiresti, seega hoia kogu aeg pilk peal.
12) Laota üksteise peale ja lase täielikult jahtuda.



Kreem:

1) Vahusta külm hapukoor suhkru- ja vanillisuhkruga. Vahusta mikseriga, kuna sellega läheb aega (ära karda, kui hapukoor alguses tundub väga vedel, see muutub vahuks aga selleks on vaja mikserdada umbes 15 minutit!).
2) Lõika väikesteks tükkideks kuivatatud ploomid ja banaanid.
3) Nüüd paneme kooki kokku: iga põhjale pane ohtralt kreemi, puista ploomide ja banaanidega. Ülevalt ja külgedele pane ka kreemi.
4) Purusta blenderiga jääkidest tehtud põhi.
5) Puista puru tordi peale ning pane ka külgedele.
6) Pane külmkappi ja lase seista üleöö.
7) Kui soovid, siis võib kaunistada ainult värskete marjadega. Kui soovid ka šokolaadiga seda teha, siis tee veevanni: lase vesi potis keema, pane kaussi poti peale, tükelda umbes 240 g tumedat küpsetusšokolaadi, lisa ka 120 g võid ning sulata. Sega korralikult ning pane läbipastva puhta kilekotti, lase see jahtuda natukene, siis lõika külg ära ning kaunista koogi ääred sellega, pane šokolaadi peale marjad, et nad püsiks kohal.

Recipe: cookie cake with farmer`s cheese cream



A few days ago my friend came to visit me and since I had sour cream, farmer`s cheese and cookies at home, I decided to make an improvised cake from cookies for the first time. At the same time I am decluttering freezer and just took out strawberry jam from last year, so now I'm making recipes using jam (I've already tried one and I will share it with you later). I mixed jam with this cream and it turned out very tasty!
I had cookie with lemon flavor and this cookie was perfectly matched with strawberry jam. Actually you can use any jam, any cookies. I found dark and white chocolate at home and decorated with it :)


Ingredients:

- 2 packs of lemon flavored cookies
- 200 g of ricotta cheese
- 200 g of sour cream
- jam
- milk
- powdered sugar (if necessary)
- dark and white chocolate for decoration on request

Preparation:

1) Mix ricotta cheese, sour cream and jam. If not sweet enough, then add powdered sugar.
2) Pour milk in a bowl and perch each biscuit in milk.
3) The first layer of biscuits, the second cream, the third again biscuits and on top cream.
4) Melt white and dark chocolate in a microwave in different dishes and decorate with a spoon. If there is no chocolate, then you can decorate with the crumb of the remaining cookies.
5) Put in refrigerator for a couple of hours, so that the cream thickens. I liked most on the next day.

Recipe: dessert in a jar



Have you ever wondered how you can use jars left from baby puree? I do. Recently I was at the friend`s child birthday party and saw how she used small baby food jars for dessert, this idea inspired me so much that I tried to make a dessert using my own recipe. I used large jars for adult guests. For children, you can use smaller jars :) You can also use beautiful glasses or other similar dishes.
This recipe is suitable for children who do not have allergies to cow's milk. If you like it sweeter, you can add honey to the yogurt or make a layer of jam.

Ingredients:

- 370 gr of greek yogurt or any other plain yogurt
- Digestive cookies
- coconut flakes
- dried cranberries
- blueberry for decoration

Preparation:

Break cookies into crumbs and mix with coconut flakes. Mix yogurt with cranberries. Lay the layers in a jar: cookies, then yogurt, again cookies, yogurt, the last layer is from leftover crumbs and decorate with blueberries. From this amount of ingredients I made 5 jars of dessert.
This dessert is perfect option for children`s birthday party.

Retsept: magustoit purgis



Kas te olete kunagi mõelnud, kuidas saab kasutada beebitoidu purke? Mina küll! Ja hiljuti käisin sõbranna lapse sünnipäeval ja ta kasutas väikseid purke magustoidu jaoks, see idee nii meeldis mulle, et proovisin teha enda retsepti, kasutades suuremaid purke täiskasvanute jaoks. Laste jaoks võib kasutada väiksemaid :) loomulikult võib kasutada ka klaase jms.
See retsept sobib ka lastele, kellel ei ole lehmapiimaallergiat. Kui armastate magusat, siis võib lisada ka mett jogurti sisse või moosi kihtide vahele.

Koostisosad:

- 370 gr kreeka jogurtit
- Digestive küpsised (mul läks kokku 8 küpsist, mina kasutasin gullon firma oma)
- kookoshelbed
- kuivatatud jõhvikad
- mustikad dekoreerimiseks

Valmistamine:

Purusta küpsiseid ja sega kookoshelvestega. Sega jogurt jõhvikatega. Kihid: küpsised, seejärel kreeka jogurt, jälle küpsised, jogurt, panin viimase kihina natukene küpsise purujääke ja kaunistasin mustikatega. Kokku tuli 5 magustoidu purki.
Selline dessert sobib hästi ka laste sünnipäeva lauale.
