Toddler recipe: quinoa meatballs with vegetables

Hello! Have you been waiting for new recipes for children? And here they are! Today's recipe is quinoa meatballs with veggies. I cooked these meatballs for my boy a couple of days ago and he really liked them, because the meatballs are soft and delicious.
If your child does not have egg allergy and can consume them, you can add 1 egg to the mass for better sticking.
This time I did not specify amount of the ingredients as I made everything to taste. I had about 200 grams of minced meat, I used about 20 grams of quinoa, 1/5 of paprika, 10 spinach leaves. But find proportions that suit you and your child.

Ingredients:

- beef minced meat
- quinoa
- red paprika
- fresh spinach
- 1 medium apple
- olive oil

Preparation:

1) Prepare the quinoa. Rinse the quinoa under the cold water, put in a pot with water (for 1 part of the quinoa 2 parts of water), bring it to a boil, then cover it and reduce the heat to a minimum. Wait about 20 minutes until completely cooked (the quinoa will absorb water and become translucent with a white tail).
2) Cut finely paprika and spinach.
3) Peel an apple and shred it.
4) Combine in a bowl minced meat, ready-made quinoa, paprika, spinach and apple, mix all together with your hands until smooth.
5) Preheat the oven to 180 degrees, cover the baking tray with baking paper and form balls with hands from the mass. Lay them on the baking paper and pour each meatball with a small amount of olive oil.
6) Bake for about 30 minutes until completely cooked.

Recipe: potato casserole with minced meat and spinach

I finally made it! I wanted to make potato casserole for so long, but I did not do it for one reason only: I was too lazy to make mashed potatoes first and then bake it (I like casseroles from mashed potatoes). But I was satisfied with my casserole, my husband also liked it :) And, as usual, with spinach :)
P.S. Spinach is over, so now the recipes without it :D

Ingredients:

- 1 kg of potatoes
- 500 g of minced meat
- fresh spinach
- 1 onion
- milk
- butter
- seasonings and oil
- ketchup
- soy sauce
- 1 egg
- mayo
- shredded or sliced cheese

Preparation:

1) Make mashed potatoes from potatoes: peel potatoes, cut them and cook until ready (add salt during cooking), pour the remaining water, add butter, milk and mix until smooth and soft.
2) Peel and chop the onions, tear spinach with hands.
3) Fry minced meat, onions and spinach in a pan until minced meat begins to emit liquid.
4) Pour the liquid from minced meat and add 2 tablespoons of ketchup, 3 tablespoons of soy sauce and mix.
5) Add the egg in a mashed potatoes and mix.
6) Lay out a half of the mashed potatoes on the bottom of an oiled baking form, lay out all the minced meat, lay cheese over minced meat, then lay remaining puree, spread and grease with mayonnaise and lay cheese.
7) Put in to preheated to 180 degrees oven until cheese melts.

Such a wonderful and delicious lunch or dinner :)

Recipe: toddler meatballs with red lentils

Since my child is allergic to milk protein and egg, I come up with recipes without these allergens. And, of course, food should be as healthy and tasty as possible.
A couple of months ago, my child had a very low hemoglobin (at the age of 1, hemoglobin was only 74!), So my husband and I started to think (and he's professional chef) how could we change food of our child so that he woukd get more iron-containing products. At the moment my son's hemoglobin is normal and he eats meat and vegetables every day. Spinach and red lentils are very useful and iron-containing foods and are suitable for both children and adults.
The amount of spinach and lentils I did not specify in the recipe, cause I put everything by feeling.

Ingredients:

- 500 g of minced meat (beef or 50/50)
- fresh spinach
- red lentils
- tomatoes

Preparation:

1) Put lentils in a bowl and rinse with cold water, pour out the water.
2) Add water and leave lentils for 30 minutes so that it absorbs water.
3) Grind spinach in a blender.
4) Mix minced meat, spinach and red lentils with hands in a bowl.
5) Form the balls and put them in a baking dish oiled with olive oil.
6) Make tomato puree (I used 5 medium tomatoes) in a blender and pour puree over balls.
7) Cover baking dish with foil and put in preheated to 200 degrees oven, bake meatballs until ready (about 30 minutes).

My child is eating them with hands and I am also adding minced meatballs to evening porridge :)

Recipe: creamy salmon soup with spinach

I cook soups quite rarely, to be honest. I always thought that cooking soups takes a very long time. But is it true? Not really. Yesterday I prepared this soup for lunch, cooking took about 30-40 minutes and the result was very tasty! As I said before, now I am making dishes using spinach for every day. Today we have a spinach day again and I already think what to cook for dinner :) Try this recipe as well.
The amount of ingredients I write is approximate, since I do not weigh them and do everything by feeling. If water is too much, then pour it in the beginning of cooking.
I prepared cheese buns for soup, the recipe I will post here in the blog :) This time photos are made on the phone, because I cooked at my parents home and did not take camera with me.

Ingredients:

- 500 g of potatoes
- 1 leek
- 1 onion
- 1 carrot
- 4 L of water
- 150 g of processed cheese
- 150 ml of heavy cream
- 200-300 g of salmon (row)
- fresh spinach
- seasonings and oil for frying

Preparation:

1) Peel potatoes, carrot and onion.
2) Cut potatoes, onion and leek. Grate carrot.
3) Cut salmon fillet.
4) Put water to boil and add potatoes and leek to it.
5) Roast onion and carrot in a frying pan until golden.
6) Add onion with carrot to the potatoes and cook until the potatoes are ready.
7) Add processed cheese and heavy cream, cook for another 1-2 minutes until the cheese is completely dissolved.
8) Add salmon fillet and torn spinach with your hands, add your favorite spices (salt, pepper, red pepper, paprika etc.) and cook for another 5-7 minutes.

Simple and delicious soup!

Recipe: pie with chicken, spinach and mushrooms

Spinach season has started! My parents summer garden is full of spinach, so I invent new dishes using spinach for every day. For example, the day before yesterday I made mashed potatoes with bacon, spinach, green beans and mushrooms (champignons). And yesterday I made his pie for dinner, yum! Remaining spinach I used for my child`s meatballs, the recipe will be later :)
Fresh spinach does not have such a strong specific smell as frozen one, but frozen spinach can also be used for this recipe. Any favorite vegetables can be added to pie. Spinach is very healthy and contains iron that we need.

Ingredients:

- 5 big mushrooms (champignons)
- 1 big onion
- fresh or frozen spinach
- 500 g of chicken breast
- sliced cheese or grated one
- 1 package of frozen puff pastry
- seasonings and oil

Preparation:

1) Leave puff pastry to defrost for several hours.
2) Cut chicken, mushrooms, peel and cut onions.
3) Heat the frying pan, add oil and fry onion, mushrooms and chicken, add ragged spinach or frozen spinach to the frying pan, fry over high heat for 5-7 minutes until the liquid begins to separate.
4) Add favorite seasonings (salt, pepper, curry, basil, oregano, cumin and others, I added Armenian mixed spices), stir, leave to cool.
5) Preheat the oven to 200 degrees, oil baking form and lay the sheets of puff pastry on the bottom, making small side edges and join sheets together. Leave one sheet, cut it into 4 strips for decoration.
6) Put chicken with vegetables on the dough. Put the cheese on top. Put pastry strips on cheese.
7) Put in the oven, when puff pastry becomes gold-brown, then take it out.

The smell is just awesome! This pie is suitable for lunch, dinner or if guests are coming by.
