Toddler recipe: quinoa meatballs with vegetables

Hello! Have you been waiting for new recipes for children? And here they are! Today's recipe is quinoa meatballs with veggies. I cooked these meatballs for my boy a couple of days ago and he really liked them, because the meatballs are soft and delicious.
If your child does not have egg allergy and can consume them, you can add 1 egg to the mass for better sticking.
This time I did not specify amount of the ingredients as I made everything to taste. I had about 200 grams of minced meat, I used about 20 grams of quinoa, 1/5 of paprika, 10 spinach leaves. But find proportions that suit you and your child.


Ingredients:

- beef minced meat
- quinoa
- red paprika
- fresh spinach
- 1 medium apple
- olive oil

Preparation:

1) Prepare the quinoa. Rinse the quinoa under the cold water, put in a pot with water (for 1 part of the quinoa 2 parts of water), bring it to a boil, then cover it and reduce the heat to a minimum. Wait about 20 minutes until completely cooked (the quinoa will absorb water and become translucent with a white tail).
2) Cut finely paprika and spinach.
3) Peel an apple and shred it.
4) Combine in a bowl minced meat, ready-made quinoa, paprika, spinach and apple, mix all together with your hands until smooth.
5) Preheat the oven to 180 degrees, cover the baking tray with baking paper and form balls with hands from the mass. Lay them on the baking paper and pour each meatball with a small amount of olive oil.
6) Bake for about 30 minutes until completely cooked.
